Best-ever Brownies recipe from Alex Hollywood’s My Busy Kitchen

Many of you told us just how much you were enjoying the Ginger and Blackberry Chocolate Brownie Recipe we posted from Alex Hollywood’s My Busy Kitchen earlier this week and now we have another delicious treat from the wife of Great British Bake Off judge Paul Hollywood – her Best-ever Brownies.

Rich in irresistible dark chocolate, they’re absolutely divine and will delight any chocoholic. You can find this recipe – and many, many more – in My Busy Kitchen, which is available from us for just £6.99 (a saving of £18 off the RRP).

Alex Hollywood recipe

Makes approximately 24

 

  • 100g unsalted butter, plus extra for greasing
  • 150g dark chocolate (70% cocoa solids)
  • 175g caster sugar
  • 75g light muscovado sugar
  • 1 tbsp golden syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 100g plain flour
  • 2 tbsp cocoa powder
  • ½ tsp baking powder

Preheat the oven to 180ºC/Gas mark 4. Butter a shallow 20cm x 28cm brownie tin and line it with greaseproof paper.

Put the butter, chocolate, both sugars and the syrup into a saucepan and heat gently until blended. Set aside to cool.

Put the eggs and vanilla into a bowl and beat together until frothy. Gently whisk in the cooled chocolate mixture.

Sift the flour, cocoa powder and baking powder into the chocolate mixture and fold together very gently until well combined.

Pour the batter into the prepared tin and bake for 20–25 minutes, until it looks browned and starts to come away from the sides of the tin.

Allow to cool, then turn out and cut into small squares – trying your best not to eat the whole lot in one go!

Ginger and Blackberry Chocolate Brownie Trifle

Alex Hollywood recipe

Serves 6

  • 2 x 100g bars Green & Blacks ginger chocolate
  • 350ml double cream
  • 1 tbsp Greek yoghurt
  • 400g mascarpone cheese
  • 1 quantity of brownies, broken into bite-sized chunks
  • 1–2 tbsp ginger wine
  • 250g fresh blackberries
  • 50g good-quality dark chocolate (80% cocoa solids)
  • 50g toasted flaked almonds

 

Melt the ginger chocolate in a heatproof bowl placed over a saucepan of boiling water (make sure the bowl doesn’t touch the water), then set aside to cool slightly.

Whip the cream into soft peaks, then fold in the yoghurt.

Beat the mascarpone into the cooled melted chocolate.

Arrange half the brownies in the bottom of a pretty bowl or glass jug. Sprinkle with a little of the ginger wine, then layer half the blackberries, half the chocolate mixture and half the cream on top.

Repeat these layers and use the back of a spoon to ‘peak up’ the top layer of cream.

Grate the dark chocolate over the surface and sprinkle with the almonds. Keep chilled until serving.

The nation’s favourite TV show, the Great British Bake Off, returns on a new channel and with a new timeslot next week and all of us at the Book People couldn’t be more excited. In fact, we even have some home-made brownies in the office today. Now due to be shown on BBC One in an unfamiliar Wednesday evening slot, we can’t wait to see the creations from the new contestants as they attempt to impress queen of baking Mary Berry and housewife’s favourite Paul Hollywood. As ever, Mel and Sue will be on hand to deliver their dulcet commentary throughout the series too.
