The aim of this book is to get people cooking different things with the usual items they buy, adding a healthy element at the same time. Talking to friends and family (Jo actually did a little social media survey) and looking in her own shopping basket, Jo has realized that we all generally sleep-shop and we tend to be in a cooking rut. We can see how it happens - work, families, getting fit for our beach holidays, socialising and box sets all eat away at our time and we haven't even mentioned cooking. When we shop for food we mostly go with what we know and buy the same things week in week out. Most shopping baskets contain chicken breasts, mince meat, salmon fillets, eggs, bags of spinach, tinned tomatoes, frozen prawns and cream cheese. Then we make spag bol, a chicken stir fry, a pasta bake made with the left over spag bol and so on. Jo's mission is to move us all on from buying the same basic ingredients and cooking the same fail safe meals, to make your cooking repertoire a whole lot more interesting - and healthy. It might be using quinoa instead of couscous for a Moroccan Fish Tagine recipe, blitzed avocado instead of cream cheese for a Creamy Salmon Pasta, or poaching the fish in a flavor-packed miso soup instead of frying. Some will be a super simple using very few ingredients, some slightly more adventurous and one that could be used for entertaining purposes. All the recipes will be really straightforward to do. All offering practical hints and tips.
