Paula Wolfert's name is synonymous with revealing the richres of authentic Mediterranean cooking, especially the cuisine of Morocco. In The Food of Morocco, she brings to bear more than forty years of experience of, love of, and original research on the traditional food of that country. The result is the definitive book on Moroccan cuisine, from tender Berber skillet bread to spiced hariria (the classic soup made with lentils and chickpeas), from chicken with tangy preserved lemon and olives to steamed sweet and savoury breast of lamb stuffed with couscous and dates. The recipes are clear and inviting, and infused with the author's unparalleled knowledge of this delicious food. Essays illuminate the essential elements of Moroccan flavour and emphasise the accessibility of once hard-to-find ingredients such as saffron, argan oil and Moroccan cumin seed.

The Food of Morocco -

This is such a beautiful, sumptuous book! I love Middle-Eastern food, and this is just the book I have been looking for to recreate dishes I have tasted in my dim and distant past! As well as delicious recipes, though, the book itself is absolutely gorgeous - the pages are good quality paper, photographs are wonderful (and ribbon bookmarks are always a useful addition to any cookbook; these even compliment the colours of the book)! When looking through the pages of this book, you feel privileged to be allowed to hold it - just lovely, and I can't wait to try many more of the recipes.

Exquisite blend of Geography and Cookery -

I've eyed up this book for a while and finally succumbed when able to get an extra 15% off.

A very beautiful book that takes the artful presentation of recipes one step further. It's a mighty tome but doesn't seem daunting simply because it's so lovely to delve into. We're heavily into home breadmaking of late and were pleased to see 50 pages on that alone.

The Real Deal -

This lady knows her stuff, I have been after some of these recipes for years! Even Moroccan relatives don't know half this stuff.

Beautiful and inspiring book -

Bought this for my brother-in-law, a keen cook, and he was enthralled. Beautifully presented book, a lot of background information, basics etc round the food and cooking; my brother-in-law nearly didn't get the book! A very inspiring book, for a keen cook there is plenty to dip into and try, and you really want to look through the pages!

Food of Morocco -

This is a whoppa of a book (500+ pages) all neatly chaptered from basic essentials through breads, salads, soups, couscous, meat and veg dishes, desserts and even drinks. Ingredients are all available and procedures have enough detail. There are even a couple of bookmarks. A fantastic book that I wholeheartedly recommend.
